Cod with Chorizo and White Beans


This recipe is one of Ruth's favourites for family dinner. It is quick, easy and tastes delicious!


This recipe is definitely a comfort dish with super simple ingredients that are extremely accessible and easy to get your hands on.


Our Peterhead finest Cod portions are very affordable and pair perfectly with the Spanish Chorizo also available in store.


We also sell White beans in store so we are a 'one stop shop' for this easy and tasty recipe.

 

Ingredients (serves 4)

1 x onion 1 x clove of garlic Cod fillet- approx 180g per person 1 x whole Chorizo (sliced) 1 x full tin of White Beans Tin of Cherry or normal Tomatoes


 

Method


  • Fry the onion and garlic in a little olive oil until nice and soft.

  • In a separate frying pan, fry off the sliced chorizo. Once it is nice and crisp, remove from the pan and drain in kitchen paper.

  • Add tomatoes to garlic and onion.

  • Add chorizo.

  • Sit the cod portions into the pan of sauce.

  • Cook for 8-10 minutes until Cod cooked through.

  • Add some stock water or wine if sauce becomes too thick.

  • Serve and enjoy!!
