'Ruth's Recipes' - Poached Skate with a Warm Tomato Vinaigrette

Poached Skate with a Warm Tomato Vinaigrette


This tasty recipe courtesy of Rick Steins is one of our favourites! It is fresh and super easy to cook; the perfect dish for a warm summer's evening. Also, many of the ingredients are readily available in-store!



 

Ingredients (serves 2)

- 2 skinned skate wings (available in store)

- 1 tbsp of salt

- 5 tbsp of extra virgin olive oil (available in store)

- 1/2 tbsp of red wine vinegar

- 1/2 a small red onion, finely chopped

- 1 small tomato, skinned, seeded and finely chopped

- 1 tsp small capers, drained (available in store)

- 1/2 tbsp finely chopped flatleaf parsley

- Salt and black pepper





 

Method


  1. To poach the fish, bring 1.5 litres of water to the boil in a large shallow pan. Add

the salt, then lower in the skate wings. Reduce the heat and simmer the fish for 10 minutes, until cooked.

  1. Meanwhile, warm the olive oil, vinegar and red onion in a small pan. After a few minutes, turn off the heat and add the tomato, capers and chopped parsley and season with salt and pepper.

  2. Serve the skate with the warm vinaigrette spooned over and some green beans on the side.
